Season with salt and pepper, mix well, and set aside. Step 2 - Cook the beef: Heat olive oil in a large pan over medium-high heat. Add the onion and cook for 2–3 minutes until softened. Add garlic and cook for another minute. Step 3 - Season the beef: Add the ground beef to the pan and break it apart with a spoon. Cook for 6–8 minutes until browned. Add cumin, smoked paprika, chilli powder, oregano, salt and pepper. Stir well and cook for another 2 minutes until fragrant. Step 4 - Warm the tortillas: Heat a dry pan over high heat and warm each tortilla for 30 seconds per side until soft and lightly charred. Keep them wrapped in a clean towel to stay warm. Step 5 - Assemble the tacos: Spoon a generous amount of seasoned beef onto each tortilla. Top with shredded lettuce, fresh salsa, avocado slices, sour cream, and cheddar cheese. Step 6 - Serve: Serve immediately with extra lime wedges on the side. Cooking Tips: Don't skip toasting the tortillas — it makes them more pliable and adds a light smoky flavour. Drain any excess fat from the beef after browning to avoid greasy tacos. Make the salsa first so the flavours have time to meld while you cook the beef. Variations: Chicken tacos: Replace ground beef with shredded rotisserie chicken seasoned with the same spices. Spicy: Add sliced jalapeños and a dash of hot sauce on top. Fish tacos: Use pan-fried white fish fillets instead of beef, and swap sour cream for a chipotle mayo. Tags: tacos, beef, Mexican, quick, weeknight dinner, crowd pleaser
